Tuxedo Brownies

These brownies show off the best of dark chocolate and “white chocolate*” in a fudgy, nutty bite. I make the dark chocolate darker by substituting one ounce of baker’s chocolate with a heaping tablespoon of special dark Dutched cacao. This is the type of cocoa used to make Oreo cookies almost black.

Time: 70 minutes. 15 min of prep/40 min to bake/15 min to cool before cutting

Servings: 16 pieces

Ingredients:

6 Tbsp. butter or margarine

2 ounces unsweetened baker’s chocolate

1 heaping Tbsp. dark cocoa

¼ tsp. salt

1 ½ cups sugar

3 eggs

¾ cups ap flour

2 ounces white confection “chocolate”

¾ cups chopped walnuts

Step-by-step directions:

Preheat oven to 350` F. Butter or spray a 9-inch square pan. Melt the butter and baker’s chocolate in a simmering double boiler until smooth. Remove from the heat, add all of the other ingredients (except the white chocolate) and stir well. Pour/spread the batter into the baking pan. Melt the white chocolate in the boiler until melted and place in a pastry bag with a small round tip, or for ease, use a sturdy storage bag and snip off a tiny corner.

*IMHO there is no such thing as White chocolate. There is only a white confection that tastes waxy and bland. For this baking, I used a ‘vanilla candy coating’ meant for dipping strawberries and the like.

Pipe the white in a spiral atop the dark batter. Drag a toothpick through the top ½ inch of the batter, drawing spokes from center to edge then edge to center, alternating until you have gone all the way around. The result will look somewhat like a spider web, if it looks otherwise, don’t fret; we are only looking for a black/white marbling contrast.

Bake for 40 – 45 minutes. The top should have formed a crust, and the inside should be firmed up but not solid. It is better to slightly undercook (think fudgy) than overbake (think hard chocolate cake). Allow to cool on a rack for 15 – 20 min before slicing three ways in each direction.

Your attempts to not eat one while hot will be in vain.
